Meso, the restaurant at the Marriott Isla Verde Beach Resort, has launched a new culinary concept that combines local flavors with Mediterranean cuisine. The menu, designed by executive chef David Serrano and sous chef Ángel Santiago, features dishes made with fresh vegetables, seafood, herbs, and olive oil, blending Mediterranean and Puerto Rican flavors. The restaurant's wine collection includes over 1,600 bottles and 220 labels from traditional and emerging wine regions.
A recent tasting showcased the pairing of wine with dishes such as Shrimp & Artichoke Fondue, a salad of watermelon, tomato, and feta cheese, and short ribs with gnocchi and cheese, each accompanied by a selected wine. Serrano explained that Meso aims to capture the essence of Mediterranean cuisine through a Puerto Rican perspective, emphasizing fresh ingredients, textures, and simplicity.
