La Chickscake, a dessert business in the Pájaros neighborhood of Toa Baja, has become known for its cheesecakes and its famous three-layer chocolate cake inspired by the 1996 film Matilda, specifically the scene featuring Bruce Bogtrotter. Owner Noelia Elespe, a veterinary technologist, began making desserts during the COVID-19 pandemic while working in Florida. After returning to Puerto Rico in 2023, she kept building the business until it moved into its current space, a "sweet truck."
Elespe explained that making her cheesecakes is not the hardest process but a meticulous one that requires time and precision. She said about 90 percent of people who see the Matilda cake call it by Bruce’s name or refer to the movie itself. The menu also includes cinnamon rolls and drinks such as coffee and batidas (blended fruit drinks).
Elespe offered advice for aspiring entrepreneurs: "Be very perseverant and work hard. Entrepreneurship is very laborious, but at the same time it has many gratifications." The business can be found on TikTok, Facebook and Instagram as La Chickscake.
