Why this matters: The $10 million project brings about 100 new restaurant jobs to Plaza Las Américas and plans to buy roughly 90% of its ingredients from Puerto Rican producers and suppliers, a direct boost for the island’s farm and fishing sectors.

CVI.CHE 105, a Peruvian restaurant from Miami, has chosen Puerto Rico for its first location outside its original market, with a $10 million investment at Plaza Las Américas. Construction began Thursday, November 5, 2026, with a symbolic groundbreaking at the mall, and opening is planned for late 2027. Juan Chipoco, owner and chef of CVI.CHE 105, said he decided to bring the concept to Puerto Rico after a first visit to Vieques, where he felt at home and was drawn to the island’s beaches, people and traditional food.

Plaza Las Américas general manager Edwin Tavarez said the restaurant strengthens the mall’s food and entertainment pillar and cited its festive atmosphere and culinary quality. The restaurant expects to hire about 100 employees and plans to source roughly 90% of its products locally, including local fish, with some specialty spices and inputs coming from Peru.

Chipoco, whose Miami operation has more than 1,000 employees and nearly 19 years in business, said difficult economic moments are exactly when to move forward, as he did when he opened Sevilla 105 in 2008 during a recession.
